Purity Is Not the Same as Clear: What Our Name Taught Us About Honey

Pure Raw Clover Honey — Purity Is Not the Same as Clear: What Our Name Taught Us About Honey

Our name means purity and clarity, which makes for an awkward admission: the purest honey we sell is often not clear at all. Give it a few cool weeks and it turns cloudy, then thick and pale. That is not a flaw in the honey. It is one of the better signs that nothing was done to it.

Two meanings of clear

In Arabic, safa is the clarity of something with nothing mixed into it. On a supermarket shelf, clear usually means something else: honey that has been heated and pressure-filtered until it looks like glass and stays that way for a long time.

The first kind of clarity is about what is in the jar. The second is about how the jar looks. They are not the same thing, and sometimes they pull in opposite directions.

Why raw honey turns cloudy

Honey is a very full sugar solution, and over time some of its glucose comes out as tiny crystals. Pollen grains and fine bits of wax left in raw honey give those crystals something to form around, so raw honey tends to set sooner.

Heavy heating and fine filtering remove most of those starting points, which is why processed honey can stay glassy for so long. The cloudiness of raw honey is the trace of what was left in, not of anything added.

What purity looks like here

For us, a pure jar means one ingredient: honey. It is strained to remove wax pieces and nothing else, and it is not blended with syrups or heated to keep it looking clear on the shelf.

Some of our honeys stay liquid for a long time and some set quickly, depending on the flower. Clover, for example, tends to set into a soft, pale spread. Both are the same honey; one simply moved faster.

Getting the clear back

If you prefer your honey runny, stand the jar in a bowl of warm water, not boiling, and stir now and then until it loosens. Avoid the microwave, which heats unevenly.

Or leave it as it is. Set honey spreads on toast without dripping and dissolves just as well in a warm cup.

The ritual

The Gentle Warm Bath

The kindest way to bring set honey back to a pour.

  1. 1Fill a bowl with warm tap water, comfortable to the touch.
  2. 2Loosen the lid and stand the jar in the water so it reaches the honey line.
  3. 3Stir every ten minutes, topping up with warm water as it cools, until the honey runs again.

Questions we get asked

Is cloudy honey bad?
No. Cloudiness in raw honey usually means it is starting to crystallize, which is a natural change. It is safe to eat and can be gently warmed back to liquid.
Does clear honey mean it is not pure?
Not necessarily. Some flowers make honey that stays liquid for a long time. But very clear honey that never sets is often heated and finely filtered, so read the label for words like raw and unheated.
How do I make crystallized honey liquid again?
Stand the jar in warm, not boiling, water and stir now and then until it loosens. Avoid the microwave.
