Raw vs. Commercial
Most honey on grocery shelves is heated and micro-filtered so it pours fast and never crystallizes. That process strips out the living parts of honey — the very things that make it beneficial in the first place.
Commercial honey is pasteurized above 160°F, which destroys enzymes and volatile aromatics. Ours never sees more than hive temperature.
Ultra-filtration strips pollen so honey can't be traced. We only remove wax — pollen, propolis, and texture stay in.

Good to know
Raw honey is honey that has not been heated above natural hive temperatures (about 95°F) and has not been micro-filtered. That's it. Everything else — pollen, enzymes, aromatics, propolis — stays in the jar.
Crystallization is a sign of purity. Raw honey naturally sets over time as glucose separates. To return it to a liquid state, place the sealed jar in warm (never hot) water for a few minutes.
Raw honey should not be given to infants under 12 months old due to the risk of infant botulism. For everyone else, it's a wholesome, natural food when enjoyed in moderation.
Keep the jar sealed at room temperature, away from direct sunlight. Honey does not need refrigeration and — properly stored — effectively never spoils.
