The harvest
Knotweed blooms late, long after most nectar is gone, in tall creamy plumes along riverbanks and field edges. Beekeepers prize it because it gives the bees one last strong flow before winter — and because the honey it makes is unlike anything else: dark, full-bodied, with a resinous herbal depth.
It is a genuinely uncommon jar. It is harvested once a year and jarred raw and unfiltered, straight from that autumn flow.
Tasting profile
How our customers use this jar day to day.
Its herbal depth holds its own against assam, chai and coffee.
Glazes for roasted root vegetables, carrots, squash and lamb.
A spoonful in warm water with lemon and ginger.
If you already love buckwheat, this is the next jar to try.
Full-bodied late-season harvest with a dark, herbal-resin depth
This jar carries the character of one bloom: autumn knotweed bloom. Color, thickness and natural notes shift from season to season because nothing is blended or corrected — what the bees brought back is what goes in the jar.
