Honey and Saffron: A Golden Luxury Pairing for Sweets and Drinks

Honey and saffron is a pairing of two golden treasures. Saffron, the world's most expensive spice, brings a honeyed, floral, slightly hay-like aroma and a brilliant color. Honey echoes and rounds out that flavor. Together they appear in Persian sweets, Indian kheer, Spanish desserts and Middle Eastern drinks. This article explains what saffron is, how to bloom it properly, how to spot real saffron, and classic ways to use honey and saffron at home. For another fragrant pairing, see honey and cardamom.

What saffron is

Saffron is the dried stigma of the Crocus sativus flower. Each flower produces only three red threads, which are picked by hand. It takes tens of thousands of flowers to make a pound, which is why saffron is so costly.

Britannica describes saffron's long history as a dye, flavoring and medicine across Persia, India and the Mediterranean.

Saffron's flavor

Saffron's aroma comes mainly from safranal, and its color from crocin. Its taste is often described as honey-like, floral, earthy and slightly bitter. That honey-like character is exactly why honey and saffron feel so natural together.

How to bloom saffron

To release saffron's color and aroma, crumble a pinch of threads, about 15 to 20, into two tablespoons of warm water or milk. Let it steep for 10 to 20 minutes until the liquid turns deep golden. Add the liquid and threads to your dish.

Some cooks grind threads with a pinch of sugar in a mortar first for even stronger color.

  • Pinch of threads (15 to 20)
  • 2 tablespoons warm water or milk
  • Steep 10 to 20 minutes
  • Add liquid and threads to the dish

Honey and saffron milk

Warm a cup of milk with a pinch of bloomed saffron, two crushed cardamom pods and a few chopped almonds or pistachios. Remove from heat, stir in a teaspoon or two of honey and serve. This is similar to Indian kesar doodh.

Honey and saffron rice pudding

Simmer rice in milk until creamy, add bloomed saffron and a little cardamom, then sweeten with honey off the heat. Top with pistachios and rose petals. Persian sholeh zard and Indian kheer are traditional versions.

Honey and saffron syrup

Bloom a pinch of saffron in a quarter cup of hot water for 15 minutes. Stir in half a cup of honey. Use over yogurt, pancakes, cakes or fruit. Store sealed in the fridge for up to two weeks.

Spotting real saffron

Saffron is often adulterated with dyed safflower, corn silk or other fibers. Real saffron threads are deep red, trumpet-shaped at one end, and release yellow color slowly when soaked, while the threads stay red. Fakes often bleed red color quickly or dissolve.

Buy from reputable sellers and expect real saffron to be expensive.

Which honey suits saffron

Light, floral honeys let saffron's delicate aroma shine. Raw Orange Blossom Honey from Florida is a natural match for saffron and cardamom sweets. Raw Clover Honey, harvested in New York State, is gentle and clean.

Strong honeys like buckwheat can mask saffron, so save them for other uses.

Saffron in savory dishes

Saffron is essential in paella, risotto alla milanese, bouillabaisse and Persian rice. A touch of honey in a saffron glaze for chicken or carrots adds gentle sweetness that complements the spice.

How much saffron to use

A little saffron goes a long way. A pinch flavors four servings. Too much can taste bitter or medicinal. Start small and add more next time if you want a stronger flavor.

Storing saffron

Keep saffron in an airtight container, away from light and heat. Stored well, threads keep their aroma for a year or two. Ground saffron loses quality faster and is easier to adulterate.

The takeaway

Honey and saffron are a golden pairing for special occasions. Bloom saffron properly, use it sparingly, and choose a light floral honey to let both shine.

Honey and saffron in Persian sweets

Iran produces most of the world's saffron, and Persian desserts use it generously. Bastani sonnati is a saffron and rose water ice cream studded with pistachios. Sohan is a brittle toffee scented with saffron. Many home cooks sweeten saffron tea with a little honey or rock candy, called nabat.

These treats show how saffron and honey can carry a dessert on their own with only a few other ingredients.

Honey and saffron tea

Bloom a few saffron threads in hot water for ten minutes, add to a pot of black or green tea, and sweeten with a teaspoon of honey per cup once slightly cooled. The tea turns a beautiful golden color and has a gentle floral aroma.
