Honey vs Yacon Syrup: Prebiotic Claims and Kitchen Reality

Honey vs yacon syrup is a comparison that grew from yacon's moment in the spotlight as a weight loss sweetener. Yacon syrup comes from the tuberous root of a plant native to the Andes. It is rich in fructooligosaccharides (FOS), a type of fiber that tastes sweet but is not fully digested. Honey is a natural sugar from bees. This article compares honey vs yacon syrup on composition, taste, research and kitchen use, with a clear look at what one study found. For another lower-calorie option, see honey vs allulose.

What yacon syrup is

Yacon is a plant in the sunflower family grown in the Andes for its crisp, juicy, sweet roots. The juice is extracted, filtered and evaporated into a dark syrup that looks like molasses. Its sweetness comes partly from simple sugars and partly from FOS, which human enzymes cannot fully break down.

What the research shows

A 2009 study published in Clinical Nutrition, Yacon syrup: beneficial effects on obesity and insulin resistance in humans, followed 55 premenopausal women with obesity for about four months. Those taking yacon syrup daily lost more weight and had lower insulin levels than the placebo group.

It was a single, small trial. Results have not been well replicated in large studies, and some participants on higher doses had digestive side effects. Yacon syrup is not a proven weight loss product.

Fiber and digestion

FOS is a prebiotic fiber that feeds certain gut bacteria. That can be a plus for some people, but FOS ferments in the colon and can cause gas, bloating and loose stools, especially at higher doses. People with IBS may find it particularly troublesome. Our article on whether honey is low FODMAP explains related issues.

Taste

Yacon syrup tastes like a mild molasses or caramel with a light fruity note. It is less sweet than honey. Honey offers a wide range of flavors depending on the flowers, from delicate orange blossom to deep buckwheat.

Cooking and baking

High heat can break down yacon's FOS into simple sugars, reducing its fiber benefit. That makes yacon better for drizzling, dressings and no-cook recipes. Honey works hot or cold: in tea, glazes, baking and dressings. Our baking with honey guide explains how to bake with it.

Cost and availability

Yacon syrup is a specialty product and costs much more per ounce than honey or sugar. Quality varies, and some products have been criticized for inconsistent FOS content. Honey is widely available in many varieties.

Blood sugar

Because much of yacon's sweetness comes from FOS, it raises blood sugar less than an equal amount of honey or sugar. Honey raises blood sugar and must be counted as carbohydrate. People with diabetes should talk with their care team before relying on any sweetener.

Safety notes

Never give honey to babies under 12 months. Ask a doctor before using yacon syrup during pregnancy or for children. Start with small amounts to check digestive tolerance.

Fresh yacon root

In the Andes and some specialty markets, fresh yacon root is eaten raw like a fruit, crisp and juicy with a taste between apple and watermelon. It is lovely in salads with a honey lime dressing. Our article on honey and lime has the recipe.

When honey makes sense

For cooking, baking and flavor, honey is the more versatile choice. Raw Wildflower Honey, harvested in New York State, suits most uses, and Raw Buckwheat Honey echoes yacon's molasses notes with a bolder profile.

The takeaway on honey vs yacon syrup

Honey vs yacon syrup is a choice between a versatile, flavorful sugar and a pricier, fiber-rich syrup with limited research. Yacon may suit no-cook uses for people who tolerate FOS; honey suits nearly everything else.

Honey vs yacon syrup in dressings

Both make good salad dressings. Whisk a teaspoon of either with lemon juice, olive oil, mustard and salt. Yacon gives a darker, molasses-like note that suits kale and roasted vegetable salads, while honey brightens greens and fruit salads. Because dressings are not heated, yacon keeps its fiber here.

How to try yacon syrup

If you want to try yacon, start with half a teaspoon a day to see how your digestion responds, and buy from a seller that lists the source and FOS content. Treat it as a specialty food rather than a supplement.

Storing yacon syrup

Keep yacon syrup in the fridge after opening and use it within a few months. Honey keeps at room temperature for years.
