Honey Science & Purity
Raw Honey vs Refined Sugar: An Honest Comparison

We sell honey, so you should read what follows with appropriate suspicion. Here is the sentence most honey brands avoid printing: honey is a sugar, it carries calories, and it raises blood glucose. Everything genuinely interesting about the comparison starts after you accept that.
What is in each, chemically
Table sugar is sucrose: one glucose molecule bonded to one fructose molecule, refined to 99.9% purity. There is nothing else in it by design — refining is the removal of everything that is not sucrose.
Raw honey is roughly 38% fructose, 31% glucose, 17% water and a few percent of other sugars, plus a fraction of a percent of everything else: free amino acids, trace minerals, phenolic compounds, bee-contributed enzymes and natural pollen. The bees' own invertase already split the sucrose, which is why honey needs no digesting step that sugar does.
Glycemic index: a real but modest difference
Table sugar sits around 60 to 65 on the glycemic index. Honeys vary considerably by floral source, with fructose-dominant harvests like orange blossom measuring lowest and glucose-dominant harvests like clover measuring closest to sugar.
So honey is often somewhat gentler on blood glucose than sucrose. It is not gentle in absolute terms, and it is not a free pass. Anyone managing diabetes should be making this decision with their doctor, not with a honey brand's blog.
Sweetness per spoon, which matters more than people expect
Honey tastes sweeter than sugar by volume, largely because of its fructose content. In practice most people need noticeably less honey than sugar to reach the same perceived sweetness in tea, yogurt or oats.
That is a quietly useful advantage: a swap that lands you using less total sweetener without feeling deprived.
The difference that is not in dispute
Sugar is an industrial product refined from cane or beet until nothing remains but one molecule. Raw honey is a single-ingredient food carried out of a hive and strained.
That is not a nutritional argument — the calories are comparable and we are not going to pretend otherwise. It is a food-quality argument, and it is the honest one.
The ritual
The One-Week Sweetener Swap
Rather than overhauling your diet, change one recurring use and see whether you prefer it.
- 1Pick a single daily habit — morning oats, yogurt, afternoon tea — and swap refined sugar for raw honey there only.
- 2Use slightly less than you would sugar. Honey tastes sweeter by volume, so most people over-pour at first.
- 3Keep the jar where the sugar bowl was. Placement decides habits more than intention does.
- 4After a week, decide honestly whether you prefer the result. If you do, swap a second use.
Questions we get asked
- Is raw honey healthier than sugar?
- Honey is still a sugar and should be counted as one. It differs in composition, in glycemic index, and in containing trace minerals, pollen and enzymes that refined sugar does not — but it is not a low-calorie or sugar-free food.
- Can people with diabetes eat honey?
- Honey raises blood glucose. Anyone managing diabetes should speak with their own doctor or dietitian about whether and how honey fits their plan.
- How much honey replaces a cup of sugar in baking?
- Roughly three quarters of a cup of honey for one cup of sugar, with a small reduction in other liquids and a slightly lower oven temperature. For eating raw, keep a separate jar for baking.
