Heather Honey: The Jelly-Like Honey of Scotland's Moors

Heather honey is one of the most unusual honeys in the world. Made from the late-summer bloom of heather on the moors of Scotland, northern England, Ireland and northern Europe, it is dark amber, strongly flavored and, most strikingly, thick like jelly. It is so stiff that beekeepers often cannot spin it out of the comb. This guide explains its flavor, its texture and how it is harvested.

Where heather honey comes from

Ling heather covers large areas of moorland and heath in Scotland, northern England, Wales, Ireland, Norway, Germany and the Netherlands. In late summer the hills turn purple with its bloom, and beekeepers carry hives up to the moors, sometimes over rough terrain, for the flow. Scottish heather honey is the most famous and is often sold as a premium product.

Bell heather (Erica cinerea), which blooms a little earlier, makes a different, runnier honey. Ling heather honey is the jelly-like one.

Why heather honey is like jelly

Ling heather honey contains an unusually high level of protein, which makes it thixotropic. Left alone, it sets into a firm gel that will not pour out of an upturned jar. Stir it or press it, and it turns runny, then slowly sets again. This also traps air, so heather honey is often full of tiny bubbles.

That texture makes it hard to harvest with a standard extractor. Beekeepers use special tools that loosen each cell, press the comb to squeeze out the honey, or sell it as cut comb. See cold extracted honey for how pressing differs from spinning.

What heather honey tastes like

Heather honey is reddish amber to dark orange-brown. Its aroma is strong and floral, and its taste is bold, tangy and slightly bitter, with smoky, woody and toffee notes and a long finish. It is less sweet-tasting than many honeys. People who like strong honeys such as chestnut or buckwheat often love it.

How to use heather honey

In Scotland it is eaten on toast, porridge and scones, stirred into whisky drinks, and used in the dessert cranachan, which layers whipped cream, toasted oats, raspberries, whisky and honey. It pairs well with oatcakes and strong cheeses. Its jelly texture makes it easy to spread.

Al Safa honeys for heather fans

We do not sell heather honey. For a bold, aromatic honey with depth, try our Knotweed honey, a dark, herbal late-season honey from North Dakota, or our Buckwheat honey, harvested in New York State, for a maltier character. Our Sunflower honey offers a different kind of thick, spoonable texture.

Buying heather honey

Pure ling heather honey is often sold as cut comb or in jars with a firm, jelly-like set and small air bubbles, which are a good sign rather than a flaw. Runny heather honey is usually bell heather or a blend. Because the harvest is laborious and limited to a few weeks of bloom, heather honey costs more than most honeys, and Scottish heather honey has a strong reputation.

Store it like any honey, sealed in a cool cupboard. Stir it before serving if you want it to spread or drizzle; it will set again on standing.

Frequently asked questions

Ling heather honey is high in protein, which makes it thixotropic: it sets into a gel and turns liquid only when stirred.

Strong, aromatic and slightly bitter, with smoky, woody and toffee notes.
Where is heather honey made?
Mainly on the moors of Scotland, northern England, Ireland and northern Europe, from heather that blooms in August and September.
How is heather honey harvested?

Is heather honey bitter?
It has a slightly bitter, tangy edge, which is part of its appeal, balanced by smoky and toffee notes.
